Cookies for Karla

Our close friend Karla (pictured below – that pic. is from a photo shoot we did with her fiancée Mike a few months back) is a Lieutenant Commander (LCDR) in the Navy who is currently serving in Southern Afghanistan at Camp Leatherneck for the next 6 to 9 months.  Karla is working at a newly built rehabilitation center for soldiers with brain injuries.  We are SOOOO proud of Karla!!!

For Karla’s 1st care package from San Diego, Shannon, Diana, Courtney and I decided to put together a “Cookies for Karla” box.  We gathered together last Sunday with 3 recipes in hand.  We started off with Diana’s Peanut Butter Cookies.  Courtney did such a great job criss-crossing each of the cookies.  We then tackled Shannon’s Recipe – Mexican Hot Chocolate Cookies.  Shannon picked this recipe because it is her standard drink at our regular Saturday morning breakfast club (that we used to have after our long Saturday runs….before Diana and I were prego).  All I can say is YUM these cookies ROCK!!!!  Our final recipe was my choice….Giant Lemon Sugar Cookies.    These cookies taste kind of like a lemon scone and they are BIG. 

We topped off Karla’s care package with some of “CoCo’s” artwork and shipped it off.  Hopefully Karla will receive it soon!  Thanks to my Mom for shrinking down all the cookies for us and adding your yummy oatmeal cookies in the box!

.As far as baked goods are concerned it doesnt get much better than homemade chocolate chip cookies. At least thats what I thought until I made these. The cookie itself has a great cake-like texture but its rich chocolately flavor is more reminiscent of a brownie. I used recipe and I also added a teaspoon of instant coffee it boosts the chocolate flavor and doesnt actually make them taste like coffee and made sure to take them out of the oven just before they hardened. These are without a doubt my new favorite dessert. Just keep the cookies relatively small since theyre quite intense in the best way of course…

Hi Carrie, Shannon, Diana and Courtney!

I LOVE the care package and completely enjoyed the cookies! There we so many so I shared them with my co-workers and several other Marines. Everyone had thier own favorite and they stayed completely fresh in the foodsaver packs!
Thanks for the hand creme and lip gloss….it is sooo DRY out here.
I can’t wait to be back for breakfast club, I would love to have Hash House right now :)
